Merry Christmas! Gluten free Yule log making on Christmas Eve

I’ve always wanted to have a go at making a Yule log and even though it was a bit last minute on Christmas Eve, Steve and I decided to give it a go!

I found this recipe on the Dove’s Farm website and made it with their gluten free white self raising flour.

It was really simple to make actually! I was worried with gluten free flour that the sponge would crack and disintegrate when I attempted to roll it, but luckily it didn’t!

We had to be a bit delicate putting on the icing, when it was unrolled, but otherwise it was pretty simple and Steve did a beautiful job finishing it off with a touch of icing sugar!

So, if you’re feeling creative, see the recipe below (with my notes on what I did differently) and I hope you all have a very Merry Christmas!

Dove’s Farm gluten free Yule Log recipe

For the sponge

3 eggs

75g caster sugar

1 tbsp cocoa

50g self raising flour

For the filling

50g butter (I used around 75g and found this worked well)

75g icing sugar

1 tbsp cocoa

For the coating

75g butter (I used 100g)

75g icing sugar (I used 100g)

75g plain chocolate (I used 100g)

Method

  1. Preheat oven to Gas Mark 6.
  2. Beat together the eggs & sugar until light and fluffy.
  3. Mix in the cocoa and flour.
  4. Pour into an oiled and lined 20x30cm/9×12″ baking tray.
  5. Bake in a pre heated oven for 10/12 minutes.
  6. Turn out hot cake onto clean tea towel.
  7. Remove the lining paper and roll up the sponge in the cloth to cool.

  2. Unroll the sponge, cover with filling & roll up again.

For the icing/coating

  2. Gently melt the chocolate then mix this into the icing.
  3. Cover sponge with the chocolate icing using a fork to create a log texture.
