This Air Fryer Gammon Joint is THE easiest way to get perfect Honey and Mustard Glazed Ham! Cooking a gammon joint in the air fryer is so easy, without the faff of boiling and roasting. You’ll get tender ham slices with a delicious sweet and sticky glaze.

This Air Fryer Ham is my new way to cook gammon. Forget boiling or roasting your ham – you need to know how to cook a gammon joint in the air fryer.

Air frying is cost-effective, so simple and is my favourite way to cook meat. You’ll get gorgeously-cooked ham with a sticky honey and mustard glaze.

Whether you want to cook an air fryer ham joint for a Sunday roast, as part of your Christmas dinner, or to slice up for sandwiches, this easy gammon recipe is perfect.

It’s a great alternative to my Slow Cooker Gammon (which I also ADORE) and you can use leftovers in everything from my Gluten Free Chicken and Ham Pie to Pea and Ham Soup.

Serve up slices of air fried gammon with a fried egg and homemade Gluten Free Oven Chips for an easy dinner, and keep slices for lunches in a soft Gluten Free Bread Roll.

Plus this recipe is naturally gluten free and dairy free. Great for using as a base for other recipes or for saving money on expensive sliced supermarket ham.

Ingredients

There’s a printable recipe card and step-by-step photos for making this air fryer gammon joint below. But for the shopping list you will need…

  • Gammon Joint: I use a 750g gammon joint which is enough for four people. You can choose smoked or unsmoked, but I prefer unsmoked. If you’re using a different weight joint, see the section below on cooking times.
  • Mustard: I use an equal mix of dijon mustard and wholegrain mustard. Both are usually gluten free and I find you get a nice tang from the dijon, and texture from the wholegrain. That being said, you can pick one or the other and it also works well.
  • Honey: I love honey and mustard glaze on ham, it’s just a classic. Feel free to swap for maple syrup if you prefer.
  • Dark Brown Sugar: Gammon with a brown sugar glaze just gives it an extra depth and flavour. This helps make the fat go extra caramelised and delicious.

How long to cook gammon in air fryer

This recipe is based off of a 750g gammon joint which is the standard size found in most UK supermarkets and enough for four people.

And how long does it take to cook a 750g gammon joint in an air fryer? The answer is 1 hour – which includes 10 minutes at the end to crisp up the fat.

When it comes to cooking a gammon joint in the air fryer, the general rule is to cook for 25 minutes per 500g (raw) meat, plus an extra 20 minutes.

The gammon is cooked when it reaches an internal temperature of 70C (160F) and I recommend investing in a cheap food thermometer. It makes life SO easy!

  • 500g gammon joint: Air fry for 35 minutes at 180C (356F) in the foil, then 10 minutes uncovered.
  • 750g gammon joint: Air fry for 50 minutes at 180C (356F) in the foil, then 10 minutes uncovered.
  • 1kg gammon joint: Air fry for 1 hour at 180C (356F) in the foil, then 10 minutes uncovered.
  • 1.5kg gammon joint: Air fry for 1 hour, 20 minutes at 180C (356F) in the foil, then 10 minutes uncovered.

Obviously this comes with the caveat that all air fryers can vary, so if you’re unsure, use a food thermometer to check the gammon at regular intervals so you don’t overcook it.

How to cook a gammon joint in the air fryer

There’s a printable recipe card below with the method. But here are some step-by-step photos to show you how easy this air fryer gammon joint is to make.

Remove the gammon joint from the fridge and all it’s packaging (including the string) around 30 minutes before cooking.

Make the glaze by mixing all of the ingredients together in a bowl until combined.

Use a sharp knife to remove the skin from the gammon joint, then score the thin layer of leftover fat in a diamond shape. This helps it to crisp up.

Place a large piece of foil in the air fryer basket and pop the gammon joint in the middle. Pour over the glaze and turn the joint to ensure it is completely covered.

Seal the foil up so the gammon is in a foil parcel. Air fry at 180C (356F) for 50 minutes. Half way through cooking, unwrap the parcel, turn the gammon over and re-wrap before continuing to cook.

After 50 minutes, open the air fryer and unwrap the gammon. Air fry for a further 10 minutes to crisp up the fat. The gammon is done when the internal temperature reads at least 70C (160F).

Remove from the air fryer and rest for 10-15 minutes before carving. You can skim the fat from the glaze using a spoon, and use it as a sauce if you like.

Storing and Freezing

Any leftovers of this air fryer gammon can be cooled completely before placing in the fridge. It should keep for up to a week.

You can enjoy the slices as cold cuts, or chop up the leftover gammon to use in recipes like pasta dishes, fried rice, gluten free chicken and ham pie or on a gluten free pizza.

Leftover air fryer ham can also be frozen. My favourite way to do this is to freeze slices between sheets of baking paper so I can just defrost what I need.

If I’ve made a ham for Christmas dinner I also like to chop up the ham into chunks and mix it with leftover turkey or chicken, then freeze in tubs ready for making a leftovers pie!

Do I need to remove the string before air frying gammon?

Yes, you will need to remove the string and cut off the skin. The skin (rind) is not edible even when cooked. So remove this with a sharp knife so you can score and glaze the layer of fat underneath.
