So here’s a little something quick and tasty I whipped up before going to the gym the other night!

Instead of giving up something for lent, I am aiming to TAKE UP exericse, that’s right, reversing the tradition!

As a coeliac I feel I have already had to give up enough food-wise, so taking something up seemed like a far better and more positive action.

I needed a healthy and high-protein meal to eat before my legs, bums and tums class, nothing too big to be bouncing round in my belly!

So here’s what I made for my pre gym meal/snack…

Curried Quinoa with Salmon

50g quinoa

Curry powder

Asparagus and brocolli – (steam the brocolli for 10 minutes and the asparagus for 6 before serving)

Salmon fillet

Olive oil

Salt and pepper

  1. Bake the salmon fillet in the oven according to cooking instructions, with a little olive oil and salt and pepper for seasoning.
  2. Place the quinoa in a saucepan of cold water – approximately 1 part quinoa to 5 parts water.
  3. Bring to the boil, add a teaspoon or two of curry powder and simmer until all the water has evaporated (around 10 minutes)
  4. Serve all together with the salmon and vegetables – it really is as simple as that!
