If you love mince pies but want a slightly different take on them, you have to try my gluten free mincemeat flapjack.

I love mincemeat and I love flapjack, so this seemed like the perfect combination for a tasty, gluten free Christmas treat – which is not healthy in the slightest, and I love that!

It’s sticky, syrupy and delicious – bake it up for your family and friends and even give it as a Christmas gift.

The best festive flapjack

When you’re on a gluten free diet it’s important to avoid eating normal oats as these can be cross contaminated with gluten.

But using gluten free oats from the free from aisle is a great way to come up with some tasty bakes.

These gluten free mincemeat flapjacks are just an ideal bake for Christmas.

I’m talking thick and gooey golden syrup, oodles of mincemeat and sweet-smelling demerara sugar, which is why I’ve cut it into small squares to avoid a sugar overdose!

You could however serve them as bars or even triangle slices if you prefer – it’s completely up to you.

These gluten free mincemeat flapjacks are packed with all the flavours of Christmas and will leave your home smelling gorgeous as they bake.

A great gluten free Christmas bake for everyone

These gluten free mincemeat flapjacks are seriously easy to make, which is why they would be a great recipe to make with the kids.

They only a handful of ingredients too and are perfect for using up any leftovers in the cupboard.

The full recipe is down below, but for the shopping list you’ll need:

  • 300 g gluten free oats
  • 150 g unsalted butter
  • 120 g demerera sugar
  • 3 tbsp golden syrup
  • 400g mincemeat

Gluten free oats are really easy to find in the free from aisle – you can use pretty much any brand marked as gluten free.

If you don’t have demerera sugar you could use light brown sugar instead, as it will still give these a lovely taste.

Most supermarket mincemeat jars are gluten free, so you should be able to choose from a variety.

Just double check the ingredients or use the Coeliac UK food scanner app to check if you can eat it first.

Making my gluten free mincemeat flapjacks

Making these could not be any simpler – just throw it all together before baking in the oven.

First you need to make the flapjack mixture by melted the butter, syrup and sugar together, and then stirring in the oats.

Spread half of the oat mixture into a lined baking tin and press down firmly.

Then  spread the mincemeat over the top of the oats, before covering with the other half of the oat mixture, firming down and baking.

It’s really that simple – once the gluten free mincemeat flapjacks are ready, let them cool a little before cutting up.

You can enjoy them hot or cold and they keep for up to five days so you can enjoy them all week.

My gluten free mincemeat flapjack recipe

This recipe makes enough for around 16 squares of flapjack and I made it in a 23cm square tin.

Gluten Free Mincemeat Flapjack

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

This gluten free mincemeat flapjack yummy gluten free Christmas recipe for mince meat flapjack - perfect for using up leftovers from mince pies!

Ingredients

  • 300 g gluten free oats
  • 150 g unsalted butter
  • 120 g demerera sugar
  • 3 tbsp golden syrup
  • 400g mincemeat

Instructions

  1. Preheat the oven to 170'C / Fan 150'C / Gas Mark 2 and line a 23cm square baking tray with baking paper. Set to one side.
  2. Add the butter, sugar and syrup to a large pan and place on a low heat. Stir until the butter has completely melted – be patient, don’t let it start boiling!
  3. Take off the heat and add the oats to the mix. Stir well until fully combined.
  4. Place half of the oat mixture in the lined baking tray and flatten down.
  5. Pour the mincemeat over the top and carefully spread over the oats until fully covered.
  6. Pour over the rest of the oat mixture, covering the mincemeat, and flatten down.
  7. Bake in the middle of the oven until golden brown, approximately 25-30 mins.
  8. Allow to cool completely then cut into 16 squares. Serve them hot or cold – they go really well with a glass of mulled wine!

Notes

This gluten free flapjack will keep for up to five days in an airtight container.

  1. Amazing! Delicious and so easy to make! I heated the jar of mincemeat in the microwave for 30 seconds to make it easier to spread,,, so easy and cut really well! Quite difficult to only eat one!
