I’ve started to get my appetite back a little bit after over a week of being ill and now that I’m feeling better I was itching to get back into the kitchen. I wanted to make something tasty but really easy – gluten free mini pizzas seemed the perfect answer!

Newburn Bakehouse – aka the gluten free branch of Warburtons – kindly sent me some samples of their new recipe sandwich thins to try, and these seemed perfect for my base.

They sent me two flavours – the linseed, millet and sunflower seed ones, and the sweeter version with sultanas and orange. Both are gluten and dairy free and suitable for vegetarians.

New recipe vs old recipe

I confess I have never even tried the old recipe ones so Newburn Bakehouse also sent me a pack of the old recipe linseed, millet and sunflower seed ones to try.

On first glance the difference was clear to see – the older ones looked a lot more dense while the new ones were softer and a bit bigger too.

I also thought the newer recipe had a nicer, more golden look to them. They tasted nicer too – a lot softer whereas the older recipe were a bit dry in comparison. A good start so far!

Sultana and orange thins

I didn’t receive an old recipe of the sweeter thins but I can imagine the difference is pretty similar. These smelt amazing and reminded me of hot cross buns! I toasted these lightly and just spread them with a little butter and they were amazing.

I found them really soft and there were loads of yummy pieces of fruit – they’d be lovely in place of a teacake or similar with a cup of tea in the afternoon!

Making mini gluten free pizzas

Using these to make mini pizzas was so simple and these would be great for a buffet, party food for children (or grown ups!) or a picnic, as you could eat them cold too.

I was a bit limited by what I had in the fridge but I topped half of them with:

  • Gluten and dairy free pesto from Sacla
  • Goat’s cheese
  • Chopped red peppers

And I topped the other half with:

  • Passata
  • Goat’s cheese
  • Chopped jalapenos

I popped them all on a baking tray and put them in a 200’C oven for 10 minutes and they were done! So simple, and you could top them with anything from sun-dried tomatoes and olives to pepperoni or spicy chorizo. The choice is all yours.
