I have decided in a bid to be economic and creative that I would experiement with making soup! The perfect student meal; soup is easy and cheap to make and it is a great way to get a hit of your daily veg!

Being a student, money is an issue. Eating healthily is so expensive, so give this soup again for the perfect lunch on a cold day. Try it with some yummy gluten free bread rolls warmed in the oven, mmmmm!

ROOT VEGETABLE SOUP

Winter warming vegetable soup!

For this recipe I used:

450g Diced Root Vegetables (I used Asda’s own pre chopped veg in my laziness! This contained potatoes, carrots, swede and parnsip)

1 Onion

1 Litre of Chicken Stock (Yet again, Asda’s Chicken Stock cubes are perfect, and gluten free!)

2 Tsp Mild Curry Powder

Salt and Pepper

1 tbsp Olive Oil

A medium sized knob of butter, about a tablespoon’s worth

TO MAKE:

Fry the onion in the butter and oil on a low heat. You just want the onion to sweat a bit, not brown.

Add the root veg and the chicken stock.

Bring to the boil, then cover and simmer on a low heat for 30-35 minutes. The veg should be soft. Stir occasionally.

Add the curry powder, salt and pepper to taste. Stir it in well.

(Don’t worry if you don’t like it spicy, the curry powder is just to add a kick but feel free to leave out!)

Blend the soup in a blender or using a stic blender. Be careful not to splatter it every where if the soup is still hot!

Reheat as desired, and enjoy!!

  1. I like the sound of it Sarah but i cannot see your picture of the soup! i don’t know whether it’s my computer! sounds good though, us gluten free people need someone like you, so keep up the recipes!
